I'm looking at using Vercel Analytics, will I need a concent banner? If so, is there a recommended way of implementing it and what it should contain?

no you don't need to. Vercel itself says
When using Vercel Web Analytics, no personal identifiers that track and cross-check end users' data across different applications or websites, are collected.
