I received some traffic that I do not particularly like. What is the easiest way to disable my entire site and spin it back up when I decide it is the right time. Alternatively, how can I block traffic from a certain country?

you can do that by using a firewall. If you hosting on vercel, they have a integrated firewall, that you can easily use and (as you said) enable them directly or disable them whenever you want
