If we remove SSR from a Next.js app in order to host on S3, we will lose dynamic routing, correct?

And we will have to use another routing solution, like React Router.
Don't comment about SST and Amplify - already tried pushing for these with my company and they won't go for it.

why are you needing to remove ssr for this?
wait you are hosing your src on static s3...? yeah in that case you would have to make it all compile time static (but why cant you use normal server...)
