Preview & Staging Environment for Platforms Starter

Hello, I started on a project about 7-6 months ago that forked the Platforms Starter v1.
Unfortunately the ephemeral preview environment has never worked properly and 500s for all pages/routes, for every commit.
Before digging in from square one, I was hoping there were some docs or an article on the Platforms Starter specifically. I know Vercel offers previews for enterprise customers, but that seems to be not what we need atm.
Since the Platforms Starter is configured to handle subdomains, this is making the configuration for this a bit hard to conceptualize.
Currently we develop and test locally, then forced to go to prod directly.
How can we config the standard ephemeral preview environment for each PR?
