Has anyone found that running website on Vercel is impacting the SEO and page speed because of cold start. What are some alternatives?

Personally, I go straight to containers and Kubernetes.... but then again i've been doing "DevOps" for over 10 years. Starting point: https://nextjs.org/docs/pages/building-your-application/deploying#docker-image
1) I take it you have checked that it really is the initial server response time hurting you?
2) Is there a reason the SEO-important pages can't be static pages?
3) Cold starts are pretty rare. How do you know this the case?

If the "easy button" managed hosting providers aren't floating your boat, then you're in the game of learning some infrastructure. If you're new to Containers and K8s then check out: https://www.udemy.com/course/docker-kubernetes-the-practical-guide/
Actually, now that I think about it, put your site behind CloudFlare CDN. It'll cache your pages and provide all kinds of bells and whistles. Also, what josh said ^^^^
